Sautéed Summer Squash with Almonds

A simple dish bursting with flavor, this delectable summer squash recipe is from Joanne Neft’s new cookbook, The Art of Real Food. It can be enjoyed on its own or as a side dish to any summer meal.

Serves 4

2 tablespoons grapeseed oil

3 cups summer squash, large diced

1 clove garlic, minced

1 large shallot, sliced

¼ cup sliced almonds, toasted

Salt and pepper to taste

 

Heat oil in a large sauté pan and add squash. Sauté until beginning to caramelize. Add garlic and shallot and continue to cook 1 to 2 minutes. Stir in almonds and season to taste with salt and pepper.
